Eating to feel better- combating chemo side effects

Sadly I have a family member undergoing cancer treatment so I recently purchased an ebook (also available in hardcopy) called “What to Eat During Cancer Treatment: 100 Great-Tasting, Family-Friendly Recipes to Help You Cope“.  I made the Raisin-Bran muffins (to help combat constipation) and seeing as though they were so easy to make and enjoyed by everyone) and not just the patient  (and who doesn’t need a bit of extra fibre?!)  I thought I’d share here.

Raisin-Bran Muffins

(makes 12 muffins)

1/2 cup boiling water

1 1/2 cups All-Bran or other 100% fiber cereal

1 egg

1 cup buttermilk

1/4 cup canola oil

1 1/4 cups all purpose flour

1/2 cup (packed) light brown sugar

1 1/4 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 cup brown or golden raisins (or a mix)

-Preheat oven to 375 degrees. Coat a muffin tin with nonstick cooking spray or fill with paper liners

-In a heatproof bowl, pour the water over the cereal and stir to combine. Set aside

-In a separate bowl, beat the egg.  Add the buttermilk and oil and stir to combine.  Add the cereal mixture, flour, brown sugar, baking soda, cinnamon, and salt and stir until just combined.  Add the raisins and stir gently to incorporate.  Spoon the batter evenly into muffins cups.

-Bake for 18 to 23 minutes, or until the tops just bounce back when touched.  Leave in the tin for 5 minutes before transferring to a cooling rack.

Note:  I recommend making these with a mini-muffin tin (and cooking for less time) as chemo patients often don’t have a big appetite.
