A quick and easy dinner which is always a sure-fire hit with the kids. I use Thai Kitchen red curry paste
Quick and Easy Thai Red Curry
1lb chicken breast, diced
2 tbs red curry paste
1 can coconut milk
1 tbs brown sugar
Frozen vegetables
Heat coconut milk to a simmer in a wok or saucepan
Add curry paste and sugar, bring to a boil , then reduce to a simmer
Add chicken breast and simmer until chicken almost cooked through
Add frozen vegetables and continue simmering until chicken cooked and vegetables heated
Serve with steamed jasmine rice.
